2002 Topaz Late Harvest California Dessert Wine. Semillion and Sauvignon Blanc grapes that have been infected with noble rot (Botrytis) don’t look very good, but they make great wine. The 2002 Topaz is a perfect example. The rotten wizened grapes are pressed, and slowly fermented in barrels. Complex flavors of honey, citrus and nuts develop in the barrel, and the thick golden wine is profoundly rich. One of the best desert wines in Napa.
650 Gallons were crafted from carefully selected grapes from Lake County (70% Semillon) and Napa County (30% Sauvignon Blanc) Harvested Nov. 29 - Dec. 7th, 2002 at 37* Brix, the juice was fermented and aged in oak barrels and bottled in May 2004 with 11.3% residual sugar by weight.
