Viognier is a fickly grape variety with unpredictable yields and should be picked only when fully ripe (Physiological ripeness). When picked too early, the grapes fail to develop the full extent of its stunning aromas. When picked too late or in too hot climates, the grape produces wine that is oily and lacks perfume.
Planted on our sandy soils, our Viognier ripens to perfection with a deep yellow color to produce wine with a strong perfume that are high in alcohol. The wonderfully ideal warm summer of 2018 together with our low yield philosophy produced perfect healthy and flavorful berries with a gentle perfume, ripened to perfection from the 22 year old vines

Hans Herzog has recently taken a more sustainable approach to their packaging and has removed the capsules from their bottles. As organic producers, they felt a little bit hypocritical using tin capsules, therefore made the decision to have them removed.
