This coffee comes from a country that takes coffee seriously. Like France with its culinary laws, Costa Rica actually passed a law forbidding the growing of any coffee varietal except Arabica beans -- the only country with such a law.
Costa Rican Tarrazu is a perfectionist's dream. Perfectly balanced, perfect acidity and a clean crisp finish -- it's the coffee a cupper refers back to when describing the things they find in other coffees that don't necessarily "belong." Of course, we usually like finding those things, but it's not that a good Costa Rican doesn't have those other things -- it's that those other things, the hint of berries and the dark chocolatey, spicy finish respectfully bow their heads to the coffee's predominantly perfect character. A very admirable coffee.
