The wine from this intense vintage has aromas of Bing cherry, blackberry, spices, and black tea accented by a hint of orange peel and smoke. The vintage is exceptionally full and round on the palate with the classic long, velvety finish that has become the hallmark of the Domaine Carneros Estate Pinot Noir. This wine is drinking beautifully now, but the depth of character should make this one of our longest aging vintages ever. To enhance the intensity of this vintage the fruit was gently de-stemmed leaving many berries whole. The grapes were then cold soaked for four-to-five days prior to the beginning of fermentation. The fermentation took place in small open-topped vats and lasted for 8-12 days. A “punch-down” or mixing of grape skins and fermenting juice was done every six hours to heighten color and flavor development. After pressing, the finished wine went directly into French oak barrels where it was gently racked once during the 10 months of barrel aging. The grapes used for the 2005 Domaine Carneros Pinot Noir are comprised of eleven clonal from four different Domaine Carneros Estate vineyards. Harvest took place in the morning while the grapes were still cool.
