How do I change an order item status that was accidentally marked as Shipped to Backordered?

You can change the status of any order or line item at any time, even after marking it as Shipped. In this case, simply go to the Order Detail screen for the order in question and change the status for the appropriate line item from Shipped to Backordered using the select list.
If you wish to also change the billing status, simply use the Billing Status select box on the Order List or Order Detail screen.
