Vineyard Notes:
Vista Creek Vineyard is located on the banks of Huerohuero Creek in
Paso Robles. The soils are about 50 percent of the Arbuckle-Positas Complex. These are very deep, well drained soils that formed in alluvium derived from mixed rocks with a typical rooting depth of 5 feet or more. The vines are planted 5 feet apart in 8-foot rows and are bilateral cordon VSP pruned. Clone 3 on 5BB rootstock was chosen for this site.
Winemaking Notes:
The grapes were hand harvested at 22 degrees Brix from a specific area of this vineyard. The clusters were lightly crushed to a tank to allow for the color in the skins to bleed into the juice. The color was monitored and after three days deemed perfect. The colored juice was then bled off the skins and inoculated with yeast. The fermentation proceeded for 22days at 55 degrees Fahrenheit. After completion of fermentation 20 percent of the wine went to neutral barrels and stirred twice a month for approximately 3 months.
Tasting Notes:
The beautiful color of this wine is complimented with the aromas of Rose, lime, and red raspberry. Slight creaminess balanced by acidity makes this the perfect warm weather and winter holiday wine. The lingering finish is fresh with citrus and berries.
The perfect wine to go with a picnic of roasted chicken or with summertime grilling of fish, especially salmon, and chicken. This versatile wine can go from your St. Patricks day corned beef to Memorial day picnic, to Thanksgiving turkey and ham.
