The fruit is pressed whole cluster, then fermented in stainless steel tanks at a not too cool temperature. The second fermentation is conducted in the bottle and the wine is aged on the yeast for a full 54 months before disgorging. <br><br> <span style="font-weight: bold; color: #1E347C;"> Tasting Notes:</span><br> Aromas of toast and spice are supported by notes of cherry from the Pinot Noir and apple and citrus from the Chardonnay.
