Guanciale is the Italian name for dry-cured pork jowl. The Romans swear by it in Pasta Amatriciana and Spaghetti alla Carbonara. Similar in flavor to pancetta, guanciale is sliced and sauteed for pasta.
Heritage guanciale is currently being produced in this country in only one place. Salumeria Biellese has been in existence on 8th Avenue in NYC since 1925 and is the oldest family run salumificio in the United States.
Salumeria Biellese is allowed to naturally ferment meat, the result of proving to the USDA that time-honored traditional methods still deserve a place in modern times through a validated program. They use no artificial starter cultures and never heat treat or pasteurize their product. This guanciale boasts a true natural taste and contains nothing artificial.
Sautee some butter, shallots and guanciale, wet with white wine, reduce with heavy cream and you have pasta al carbonara (don't forget the egg with the pasta). For Amatriciana, sautee olive oil, onions, guanciale, then add tomatoes, reduce, add spices and throw onto pasta.
Refrigerated, this product has a shelf life of up to 6 months and can be left un-refrigerated for 3 weeks.
