Some consider this to be the best cured product produced by Paradise Locker Meats who recently won Reserve Grand Champion at the Missouri Association of Meat Processors 2007 Convention. Just heat and eat and serve with baked beans. The shank is also known as a ham hock, and is a true part of America's food culture. Of all the ones we have taste-tested ours is by far the best. It has a good amount of meat on the bone and each shank serves one person. The cure gives the shanks sweetness and the smokehouse caramelizes the outside until it is crispy. The shanks are smoked at 180 degrees for five hours. So once they arrive to you, just heat them for a short bit and serve! You can also use them for the best pork and beans in the world or as a stock for soup. Our shanks come from Newman Farm pigs,Certified Humane, raised on the rolling plains of Myrtle, Missouri, in the Ozarks just on the boarder of Arkansas. These pigs are 100% Berkshire and raised 100% on pasture with no antibiotics.
