Hello, I am thinking of making a mash tun out of a cooler with a pvc mainifold for the false bottom. If I use regular PVC instead of CPVC what ill effects will this have on the final product? Thanks for your help.

The best reason for using CPVC is it's higher temperture rating. It can handle 176 deg F easily. PVC is only rated at 120 deg F.
As far as ill effects, you can expect some distortion/slumping if you go with pvc.
