Question
Is it possible to make (good)beer with a sugar substitute? Specifically Stevia based sweeteners?

Unfortunately, Stevia is not fermentable. No alcohol would be produced. Same thing with Equal, Nutrisweet etc. They CAN be used to sweeten up things like cider, wines etc after the fermentation is complete, but usually this is not desirable in beer.
