This strain also has goodtolerance to free sulfur dioxide. This strain is recommended forfull bodied reds and whites. It is not recommended for grapes thathave recently been dusted with sulfur, because of a tendency toproduce hydrogen sulfide in the presence of higher concentrationsof sulfur compounds. Montrachet is noted for low volatile acidity,good flavor complexity, and intense color.&lt;br aria-level="0"aria-posinset="0" aria-setsize="0"&gt;· Pasteur Champagne - a strain of Saccharomyces bayanus, has beenderived from a pure culture slant of the Institut Pasteur in Paris.This strain has been widely used in the U.S. since 1968. It is astrong fermenter with good ethanol tolerance, and will readilyferment grape musts and fruit juices to dryness. This strain alsohas good tolerance to free sulfur dioxide. This strain isrecommended for all white wines, some reds and for fruit juices.Although this yeast is somewhat flocculent, it is not commonly usedfor sparkling wine. Pasteur Champagne has been recommended, byseveral sources, for restarting stuck fermentations. Ferments bestbetween 15-30 deg. C, (59-86 deg. F).&lt;br aria-level="0"aria-posinset="0" aria-setsize="0"&gt;· Pasteur Red® - a strain of Saccharomyces cerevisiae, has beenderived from the collection of the Institute Pasteur in Paris. Itis a strong, even fermenter that produces full bodied reds. Thisyeast encourages the development of varietal fruit flavors,balanced by complex aromas, especially when using grapes of theCabernet family. It may be necessary to cool the fermenting must toprevent unwanted temperature increase. This yeast is reported togive character to less robust red grapes, or those picked beforeoptimum development.&lt;br aria-level="0" aria-posinset="0"aria-setsize="0"&gt;· Premier Cuvée - a strain of Saccharomyces bayanus from Frenchwine yeast is a special isolate of Red Star Yeast &amp;amp; Products.This yeast has good tolerance to ethanol and free sulfur dioxide,and ferments to dryness. Premier Cuvée is noted as a very lowproducer of foam, urea, and fusel oils. It is recommended for reds,whites and especially champagne. This yeast is reported to performwell restarting stuck fermentations. Winemakers have remarked thatPremier Cuvée is the fastest, cleanest, and most neutral fermenteroffered by Red Star®.
