Chicken Meatballs :
1 lb. Ground chicken
2 Eggs
3/4 cup Breadcrumbs, unseasoned
1/4 cup Red onion, minced
1 tsp. Herbs d Provence, minced
Salt and pepper to taste
1/3 – 1/2 cup Robert Rothschild Farm Hot Pepper Peach Chipotle Sauce
1/2 cup Plain yogurt
Salt and pepper to taste
In a large mixing bowl, combine the first 6 ingredients by hand until completely combined. Form into 2 inch round balls. Place on a parchment lined baking sheet and bake in a 350 degrees F oven for 20-22 minutes. Meanwhile, mix together the Hot Pepper Peach Chipotle Sauce, yogurt, salt and pepper. Skewer meatballs and serve with Hot Pepper Peach Chipotle yogurt sauce on the side.
