Tomatillo Pork :
2.5 Lbs of Lean, Thick, Boneless Pork Chops. Cube pork into 1 inch cubes. Brown pork in pan with 3 teaspoons of oil, do not completely cook.
Add 1 jar of Tomatillo Salsa and simmer for 45 minutes, stirring occasionally.
Remove from heat and add ½ of a bunch of diced Cilantro. Serve hot over rice.
