Cold Noodle Salad :
4 Tbsp. Rice vinegar
3 Tbsp. Sake Wasabi Mustard
8-9 Tbsp. Olive oil
1/2 lb. Fresh mussels, steamed and shelled
8 oz. Rice noodles, cooked
1/2 cup Green onions, diced
1/2 cup Carrots, julienned
1/4 cup Radish, sliced, optional
Red pepper flakes to taste
Salt and pepper to taste
Whisk together the rice vinegar and the Sake Wasabi Mustard. While whisking, slowly drizzle oil to form an emulsion. Add the mussels into the vinaigrette. In a large bowl, toss together the rice noodles, green onions, carrots and radish. Combine the mussels vinaigrette into the noodle salad. Season with red pepper and salt and pepper to taste.
