Garlic and Potato sauce :
3 Lg potatoes, peeled or unpeeled, cubed
1/3 cup olive oil
Salt
Freshly ground black pepper
10 large garlic cloves, coarsely chopped
¼ tsp. Hot red pepper flakes
1 cup fresh flat-leaf parsley, coarsely chopped
Freshly grated parmesan cheese
Drop potatoes into saucepan of boiling water and cook for 8 minutes or just until tender; drain well. Heat oil in large nonstick skillet over medium- high heat. Add potatoes, salt, and pepper; cook for 10 minutes or until crisp and golden. Reduce heat to medium- low; add garlic and red pepper flakes and cook for 1 minute or until tender. Add drained hot pasta to pan, sprinkle with parsley, and toss until combined. Taste and add more salt if necessary and serve with cheese. Serves 2 to 4.
