Pizza Bread with Tomato Pesto Salsa:
Once you've tried these addictive and sinfully easy little finger foods you'll be hooked. They are the perfect snack for teenager's parties, but don't count out the grown-ups either!
1 loaf prepared frozen garlic bread, thawed and halved lengthwise
3 cups Texas on the Plate Tomato Pesto Salsa
2/3 cup sliced ripe olives
12 ounces shredded mozzarella cheese
1/2 cup grated parmesan cheese
Preheat oven to 375 degrees. Separate the halved loaf of bread, placing the halves, buttered sides up, on a baking sheet. In a small bowl blend the salsa with the ripe olives. Spread equal portions of the pesto over each half loaf. Scatter half of the mozzarella cheese over each bread, spreading evenly, then half of the Parmesan cheese. Bake in preheated oven for 12-15 minutes, or until bread is crisp and cheese is melted and bubbly. Slice into 1-inch thick slices using a serrated bread knife. Serve hot. Serves 15 to 20 as finger food.
