Glazed Duck with Apples and Onions:
To taste Rosemary
To taste Salt & pepper
As needed Robert Rothschild Anna Mae's Smoky Sweet Chipotle Oven & Grill Sauce
3-4 Duck breasts
2 Tbsp. Butter
3-4 Apples
1/3 cup Golden raisins
2 Tbsp. Cinnamon
1 tsp. Coriander salt and pepper, ground
2 Tbsp. Grand Marnier liquor
2 Tbsp. Olive oil
For Apples and Onions: Heat butter in frying pan. Add apples and onion and cook for 5 minutes. Add raisins, sugar, cinnamon, coriander, salt and pepper - mix together. Continue to cook for 2 minutes. Finish with Grand Marnier and cook for remaining 2-3 minutes until onion and apples are well caramelized, but not mushy.
For Duck: Heat oil in frying pan. Season duck breast with rosemary, salt and pepper. Sear breast on both sides then baste with Anna Mae's Smoky Sweet Oven & Grill Sauce. Transfer to 350 degrees F oven to continue cooking for 25-35 minutes. Remove from oven and allow to rest for 3-5 minutes.
Serve sliced duck with caramelized apple and onions.
