Vegetable oil cooking spray
4 Tbs Bandana Bandito Cajun Mesquite Mustard
2 tsp paprika
1 tsp ground cumin
1 tsp chili powder
Pinch of cayenne pepper
16 red potatoes
Preheat oven to 400 degrees
Spray a roasting pan 3 times to coat thoroughly with the vegetable oil. Put the mustard, paprika, cumin, chili powder and cayenne pepper in a large bowl. Whisk to blend. Prick the potatoes several times with a fork and then add them to the bowl. Toss to coat the poatoes evenly with the mustard mixture. Pour the coated potates in the prepared roasting pay, leaving some space between them. Bake for 45 minutes to 1 hour, until the potates are fork tender. Makes 4 servings.
