Broiled Shrimp with Lavaca Bay Lemon Grass Pesto and Feta Cheese : Serve with a green salad and a good French bread for a meal that will make you famous! 20 large (16-20 count) shrimp, peeled, de-veined and butterflied, with tail section left intact 3/4 cup Texas on the Plate Lavaca Bay Lemon Grass Pesto 4 ounces Feta cheese, crumbled 6 green onions, sliced thin, including green tops Preheat broiler and place oven rack 6 inches below heat source. Arrange 5 shrimp each in individual ovenproof serving dishes. Spoon a portion of the Lavaca Bay Lemon Grass Pesto over each shrimp. Scatter some of the crumbled cheese on top and toss the green onions over the whole serving. Place the dishes under the preheated broiler and cook for about 4 minutes, or just until the shrimp have turned opaque throughout and the cheese is lightly browned. Serve hot. Serves 4.
