Mesquite Pork Tenderloin : 2 or 3 Pork Tenderloins (total 3 lbs weight trimmed) 3 cloves garlic, cut into shards 4 Tbs Cajun Mesquite Mustard 2 lbs red potatoes, cut in wedges 2 onions, cut in wedges 1 lb carrots, peeled and cut into 2 inch pieces Place pork in roasting pan. Stud with garlic. Liberally coat the pork with a layer of Cajun Mesquite Mustard. Cover and let marinate in refrigerator for about 2 hours. Preheat oven to 350 degrees. Put potatoes, onions and carrots around the pork, add 1/4 cup water. Roast at 350 degrees for 35-45 minutes or until internal temperature of pork is 150 degrees. Allow to rest 5 minutes before serving. (serves 4-6)
