Prerequisite: #201 Management Core Course (unless student tests out) and WISE approved responsible hospitality certification.
Focusing on all management responsibilities within the tasting room, this course covers a wide array of subjects. Emphasis is placed on tasting room staff management including effective sales training and coaching, scheduling, and compliance, safety, and sanitation policy adherence. In addition, students are led through tasting menu development, budget development and implementation, retail and merchandising fundamentals and tasting room direct to consumer best practices. The course wraps up with a clear understanding of how tasting room direct to consumer activity integrates with other DTC functions at the winery and provides key success metrics and reporting tools. Successful completion of this course will result in earning a WISE Tasting Room Management Certificate, Level II.
