It almost becomes a comforting refrain, the homage to the vineyard paid by today's premium producers. The lessons of the old world combined with the careful selection of techniques from the technology-laden wine schools of the new world.
The Speizers personify this blended approach, believing in minimal intervention in the cellar while remaining highly attentive to the needs of the vines in their vineyard. They purchased and then replanted the Chamisal vineyard in the nineties, adopting high-density farming techniques designed to bring more concentration to their fruit through by lowering the yield of each vine.
The Wine
After more than a decade of being tired of Chardonay, Americans are re-discovering this pleasant grape, which makes the #1 selling white wine in America. This particular Chardonnay is infinitely more interesting than your Father's buttery California quaff of yester-year, balancing a crisp acidic structure that keeps its ripe, round fruit interesting and inviting from the first sip to the last.
