Cool Fish Chardonnay is an artisanal and creative blend whose goal is to bring out a new dimension in seafood that other white wines may not. The balance between acidity and flavors is what makes this wine unique. Cool Fish Chardonnay 2005 is made of 85% Chardonnay whose source is from the cool growing region of Santa Lucia Highlands in Monterey, 9% Sauvignon Blanc whose growing region is near Santa Maria Valley in Central Coast and 6% Chenin Blanc from Central Valley. Chenin Blanc of this vintage's blend is barrel fermented. This blend of Cool Fish Chardonnay will change every vintage. ENJOY!
