Vineyard Information
The fruit for this wine came entirely from the Salaal Vineyard that surrounds the house of Bob Schiebelhut, one of the owners of Tolosa. It sits on gravel soil left by an ancient creek bed. We designate a few rows of two different clones, and give them additional attention and hand work to increase quality. We pull off most of the leaves around the fruit so that the raw vegetative aroma is minimized. The fruit yield per vine is kept low so that full ripeness can be achieved. This also intensifies the aroma and flavor of the wine.
Winemaking & Cellar Information
The press regime is the most important aspect of winemaking with white wine in general and Sauvignon Blanc in particular. You have to be very careful not to take too much juice from the fruit or the quality of the wine really suffers. This wine does not benefit from oxygen so that is excluded as much as possible. There are a suite of yeasts that have been selected mainly in the Loire region of France for this grape and we utilize a few of them. There is no one perfect yeast. We ferment cool in stainless steel tanks and hold the wine cool on its yeast lees until we are ready to bottle in the spring. We do not allow the secondary malolactic fermentation to occur as we wish the wine to stay as light and crisp as possible.

Tasting Notes
Tasting notes because they are metaphoric and personal should always be taken with a grain of salt. How I describe this wine may not be the way you would. This wine is very pale in color. It has a typical aroma for the varietal with notes of green fig, guava, and grapefruit. There are minor aromas of melon and cut grass as well. The mouth is balanced and medium in weight with the flavors tending towards nectarine and peach.- Larry Brooks, Winemaker
