New York. Produced and bottled in Sagaponack, New York. Under
Winemaker/Technical Director Roman Roth's meticulous care, Wölffer
Estate Vineyard encompasses 55 acres and practices sustainable
agriculture. Similar in many respects to conditions in Bordeaux,
the local Bridgehampton loam soil, combined with the breeze from
the Atlantic, only 2.6 miles away, provides the perfect conditions
to achieve the ripeness and acidity necessary for producing
Wölffer's signature style: European elegance combined with the
typicity of their Long Island terroir.

96% Merlot,
4% Cabernet Franc
Style/Taste
Dark red
brick in color. The aroma is wonderfully packed with
blueberry and raspberry notes, with hints of fine cedar, licorice
and subtle lees notes.
The
mouth-feel is medium bodied. Wonderful fresh fruit and great dark
chocolate characters give way to layers and layers of velvet
tannins. There is also a hint of acidity and minerality, making
this wine very classic and food friendly.
The finish
is long with great structure.
Technical
Data
After a very
good growing season with wonderful cool nights and abundant
sunshine, the mature grapes were carefully hand harvested between
October 4th and 21st, followed by further selection on our sorting
table.
The Merlot
came from 3 different blocks. The grapes were destemmed and
then fermented in Stainless Steel. The fermentation went up to 89F
and the cap management was done via pump over 3 times a day. One
lot macerated for 16 days and the other two for 23 days. We gently
transferred and pressed the grapes, separating the press fraction.
Following 19 days of lees settling, the wine was moved into 20% new
and 80% older barrique barrels. Malolactic Fermentation finished
100% and the wine was carefully racked a total of 5 times during
the maturation time,13 months in French oak barriques. The
wine was bottled unfiltered and unfined on February 9th 2010,
resulting in 2061 cases.
