Technical Data

2012 was aperfect growing season for this wonderful aromatic variety. Thanks to an earlyspring and a warm summer, all the golden yellow grapes were safely picked bythe time Superstorm Sandy rolled around.

The grapeswere hand-picked on September 17th. Leaf removal in the fruit zone during thegrowing season insured that every cluster was exposed to the sun and ripenedvery well. The grapes were handled gently and got softly pressed. The juice was chilled down to 50° and well settled followed by a coolfermentation of 64° in stainless steel to complete dryness. At that stage the young wine was racked andaged on the fine lees for a total of 2 months, followed by filtration. Malolacticfermentation was completely avoided to keep the vibrancy and fruit forwardness.The wine was bottled in March 2013, producing 350 cases.

Lightshiny yellow in color.

Aromasof a fresh cut meadow, with hints of kiwi and ripe lime.

Themouth-feel is crisp and refreshing -- very typical Sauvignon Blanc, with greatacidity, minerality and a tightly concentrated core, well balanced by solidfresh fruit.

Thefinish is long, with great play between lively acidity, fresh fruit and classicflintiness.

Winemaker's Notes

Light orange in color with a shiny copper hue.

The aroma is very floral with hints of a fresh cut wildflowerfield. The mouth is vibrant and fruit driven. The fresh, ripe berrynotes are perfectly balanced by lively acidity and wonderfulminerality. A natural and refreshing CO2 mousse is present,retained from the cold, slow fermentation process. The wine is dryand the finish is elegant and playful.

Technical Data

2012 was a special growing season, perfect for all the wineswe made. This Rose gives you the first glimpse at this fantasticvintage. Thanks to an early spring and a warm summer, all thegrapes were safely picked by the time Superstorm Sandy rolledaround.

We specially selected and worked with several blocks for thisRose and chose the perfect moment to pick. The fruit was carefullyharvested starting September 13th with one section of Chardonnay,followed by the Wagner Pinot Noir from the Finger Lakes, then moreChardonnay. Cabernet Franc and Merlot were picked at the beginningof October, and finally the Cabernet Sauvignon on October 11th. Thecrop level varied from 3 to 4 tons per acre. None of the varietiesstayed on the skins and all were gently pressed. The juice for alllots was well settled at 50° Fahrenheit, followed by a coolfermentation temperature up to 63° Fahrenheit that lasted 18 daysto total dryness. Fermented and aged in stainless steel, the winestayed on the lees for 3 months. Most of the blending was done inthe juice stage to compliment the fruit, acidity, pH and sugars ofthe different blocks and varieties. Malolactic fermentation wasstrictly avoided to keep the lively acidity and pure fruitcharacters. The wine was filtered and fined in January and bottledin February, producing 11,711 cases.

Beautifulperfume of fresh ripe apples and honeysuckle, with a fine yeastaroma, fills the glass. The mouth-feel is light and fresh with apure apple taste, balanced by crisp acidity and a classic tartnessenhanced by a fine CO2 mousse. The finish is off dry, making itvery tasty, refreshing and food friendly.

Grown by theHalsey's of White Cap Farm in Bridgehampton, New York.

The 2011growing season, despite a brush by hurricane Irene, turned out verywell and brought forth ripe apples with good acidity. Through acareful selection taste test, the above blend of apples was chosen,with each variety contributing a distinct character. After pressingthe apples on January 25th 2012 at White Cap Farm, we brought thejuice to the winery at Wölffer Estate to cold settle for 5 days.The juice was carefully racked and inoculated with the wine yeastCote de Blanc to start fermentation at a cool temperature of61°.After 14 days, fermentation was stopped, to preserve somenatural sugar, by chilling the wine and racking it off the yeast.The Apple wine was filtered and bottled on March 21st 2012,producing 833
