How can I change the E-mail address link located on the cart menu? The one we have there now is no longer current.

You may change the email address that is displayed in the shopping cart in your Order Management System under Settings / Edit General Information / Customer Service E-Mail. Additionally, you may make this email address not visible in the shopping cart. You can do so under Settings / Boolean Options / Display E-Mail.
