Is there a way to set a product to sold out but avoid having it automatically set inventory to zero? We have a couple of products that are no longer available to the public but would like to use Nexternal to monitor the remaining inventory.

Consider marking the products visibility "Internal" instead of using the sold out status. This will allow you to adjust inventory levels.
