How do I list one color of an item on sale? For instance we are marking down our burgundy hoodies but not our navy ones.

You would first need to change the pricing of the item from Single to SKU. Then at the SKU level you can alter the pricing for each color variation. Go to Products > Edit the product > Pricing > SKU > Next > Next > Next > Here you would need to set a specific price for each size and color variation.
