A customer put a preferred delivery date and now needs to remove it. How do I do this (remove the red truck symbol) and return it to regular ship date.

Edit the order in the Order Management System. The preferred delivery date field is optional, and its contents can be deleted. After deleting, click finish. The red truck should disappear.
